2nd Annual Bao Fest!


I have a fairly extensive obsession with Bao, and I’m not the only one of my friends with the issue.  I have Wow Bao of Chicago to blame for my addiction.  Our annual conference used to be in Chicago, and my friend and co-worker Dustin and I, would bee line to Wow Bao every chance we got… we may have even got some to go to eat in the cab to the airport.

We even contemplated having them shipped from Chicago in a moment of withdrawal but after seeing the price tag, we set off to making our own from scratch… hence the 1st Annual Bao Fest.  It was good but the dough was sort of a nightmare.

THEN, while googling Bao for the millionth time, searching for a place that makes them in Orlando, the heavens opened, trumpets sounded, and I found out that the asian market across the street from me has an entire freezer aisle dedicated to them.

It was then that the 2nd Annual Bao Fest was born!

Once again, the foodie crew gathered and there was much rejoicing.  I threw together my trademark asian salad, mixed up a batch of hurricanes and we killed it… it was AMAZING!!!

Can I just say “YUM!”?  I’m about to whip out the steamer just looking at these pictures!

Broccoli Slaw Wraps

Broccoli is easily my favorite vegetable… next to asparagus.  Oh yeah, or artichokes.  Has there been confirmation of avocado’s vegetable status?  No?  Well, anyways, broccoli is easily my 3rd (or 4th) favorite vegetable.  On a whim I bought a bag of broccoli slaw with the intention of adding it to stir fry.  But, in general, I laugh in the face of intention when it comes to preparing food.  Why?  Because I’m lazy.  So one night, starving, I threw all this stuff together and some stars collided and the earth shook and it was good.  Amen. 

I must confess that’s not normally what happens.  It’s usually “meh” on the upside and “bleck” on the downside, but hey, I try to see the sunny side and take my wins when I get them.  And this broccoli slaw?  I have an actual real live person that REQUESTS this meal which leads me to believe: it’s a win! 

Broccoli Slaw Wraps

4 Whole Wheat Pitas halved

12 oz Broccoli Slaw

6 oz Live Alfalfa Sprouts

6 oz Dried Berries

3 tsp VEGAN Prepared Horseradish

8 oz VEGAN Sour Cream

There’s just three easy steps

1, Take all this:


2. Dump it all in a bowl and stir…


… until it looks like this.


3. Stuff into pita halves.


It’s as easy as 1, 2, 3…

or doe ray me….

or A B C…

that’s as easy as slaw can be…

and I can guarantee that you can make this meal within the 3 minutes it takes to sing this song that in undoubtedly stuck in your head.

Marinated Greens

I’ve been on every diet known to man.  I’ve vacillated from the extremes of raw foods to “I don’t care – I eat it all” but I’ve realized that I feel the best when I eat primarily vegan dishes.  This is one of my most favorite raw food recipes introduced to me by my friend, Christine, over at Recipes By Christine.


Marinated Greens

(Serves 1-2 as a main dish or 4 as a side)

1 bunch of Kale (or combination of kale, mustard greens, spinach, swiss chard or collard greens) – remove thick stem and chop
1 T Extra Virgin Olive Oil
1 Lemon Juiced (I use a citrus press)
1 Garlic Crushed
1 t Sea Salt (or to taste)
4 Green Onions, finely chopped
1 Avocado, diced

Combine all ingredients, except avocado in a large bowl. Work with your hands until the greens are wilted, add avocado and serve. If you prefer, you can mush the avocado too, it’s a little messier though.
For a variety – add any of the following: sunflower seeds, finely chopped tomato, sprouts, Bragg’s Liquid Aminos (natural alternative to soy sauce), fresh ginger and/or cayenne pepper.

Dear Dairy,


 Dear Dairy,

(no, I didn’t just misspell “diary”)

I’ll start out with complete honesty.  I love you, Dairy, but we are just no good together. 

 I admit that all I have to do is catch a glance of you from across the room and all those feelings come rushing back.  Though I wish it would, the honeymoon never lasts, Dairy.  You must admit that you know this is true.  I end up hurt and resent you for it.  You deserve someone who can love you fully, with no regrets.

The longer I stay away from you, the easier for me it is to deal with missing you.  There are others in my life that can fill your shoes as long as I don’t think about it too much.  I know that nothing will ever truly be as wonderful as you, but it hurts too much and I just can’t do it anymore.

Every time you knock on my door in the form of melty brie deliciousness or torturously decadent chocolate fondue or even the scant pat of butter on a dinner roll, you suck me back into your clutches.  It takes all of me to resist you.  Sometimes you sneak in, disguised and treacherously seeking me out, I end up in agony. 

Our last encounter left me bedridden, my head pounding in my hands, my stomach twisted, my throat raw… is this really what you want for me?

In the words of Boy George, “Do you really want to hurt me? Do you really want to make me cry?“

I chose to believe the best about you.  I don’t want to think that you hurt me intentionally.  I know that, deep down, you are really good and loving and nurturing.  Like I said before, we are just not meant to be together, you and I.

I’m sorry Dairy.  I never meant to lead you on or cause you pain.  Just to clear the air, I’m not ending things with you for someone else.  I’ve also ended things with Tomato, Eggs, and Corn.  There are just too many of you in my life and I need to be alone for a while.  Not even one single M&M…

I don’t think I’ll ever be able to have a relationship with you so please don’t ask me to remain friends.  It’s time we both move on.

I love you… Goodbye.
